Ginataang Manok Recipe

Ingredients:

  • 1 1/2 lbs chicken (cut into serving pieces)
  • 3 cloves garlic (minced)
  • 1 onion, chunks
  • 1 large potato, chunks
  • 1 medium carrot, chunks
  • 1 can (13.5 oz) coconut milk
  • 1 tsp annatto powder dissolved in 1/4 cup water
  • 1 Tbsp Fish Sauce (Patis)
  • 2 tbsp cooking oil for sauteing
  • 12 pieces quail eggs, boiled

Cooking Instructions:

  1. Heat pan with cooking oil. Fry potatoes and carrots. Cook until slightly tender. Set aside.
  2. In the same pan, saute garlic and onion.
  3. Add the chicken and fish sauce to taste. Cook for 10 minutes or until the chicken is tender with occasional stirring.
  4. Add the coconut milk. Simmer for 10 minutes.
  5. Add the dissolved annatto mix.
  6. Add potatoes, carrots and quail eggs.
  7. Simmer once.
  8. Remove from heat.
  9. Serve hot. Enjoy!
